This recipe does not contain spiralized vegetables. That shit is ridic.

Sure, it may be more appropriate to have some kind of spiral pasta in this dish, but I’m here to persuade you to eat more lentils. Because they’re good and good for you. Today’s dish inspired by:

The Downward Spiral, Nine Inch Nails’ 1994 album of industrial rock genius.

Biggest Singles: Closer, Hurt

Favorite Track: When you’re talking about your favorite albums of all time, it’s always difficult to choose a favorite song because the reason you love the whole album in the first place is because every song is so great. As much as I adore Trent’s vocals always and forever, I have to say my favorite track is A Warm Place, which is instrumental. Somehow, the absence of his vocals brings out such an earnest quality in this music for me. I remember listening to this track ad nauseam and every time I hear it, it makes me ache inside all over again. Reptile is a close second for its capture of melodic industrial machinery sound and disgusting, macabre lyrical imagery.

The recipe:

The Downward Lentil

You’ve got protein, carbs, fiber, and loads of flavor with just a few seasonings. Always feel free to up the flavor layers with onion, garlic, and ginger. I skipped all three this time because I’m a new mom (that excuse is going to take me far!), but typically I would include all three in a curry dish. I used three different curry powders here.

Prep time: Depends on how fast and careful you are with a knife. (Chop the veggies, don’t make fake pasta out of them, you’re not fooling anyone.)

Boil 5 c water, add Rice & Lentils, simmer for 20-30 mins.

Sauté tofu cubes until almost browned on all sides, then add sliced carrots and cauliflower florets, let cook for 3 minutes. Sprinkle with spices and salt to taste, then add coconut milk and 1/2 cup water with the kale. Simmer for 5 more minutes, then serve piping hot spooned over the lentils and rice. Bon appétit, let’s eat.
